When I travel the thing I must always have in my carry on isΒ good snacks. No matter what else I pack, the snacks take first place, because they keep me going and keep me pleasant.
Now what, you may ask, is the best travel snack around? Well my vote is for granola bars. Granola bars are easy to transport, don’t need refrigeration, can include many healthy things like nuts and fruit, and best of all they are so easy to make waste free.
I started my search with puffed quinoa which I grabbed this at Bulk Barn last week on a whim. I also kept in mind the ingredients I had on hand, and what I knew I would not be including, namely nuts, because of my allergy.
After a while I stumbled on a tasty looking recipe that I knew I could tweak to my liking. You can find the original recipe for Spiced Apricot, Orange + Quinoa Muesli Bars on My Darling Lemon Thyme. I followed the preparations, but changed up the ingredients.
Blueberries and chopped dried figs is a great combo! Loved by my mom and my fiance means this flavour has the seal of approval in our house!
Eat these guys by themselves or dip them in yogurt!
Ingredients
- 1 cup puffed quinoa (you could also substitute any puffed grain like millet or rice)
- 1 cup oats
- 1/2 cup dried fruits of your choice (we have tried blueberries and chopped figs and blueberries and cranberries)
- 1/2 cup roasted seeds (I used pumpkin seeds both times, once salted and once not both were great, you could also add in nuts if you like or sunflower seeds or a mix)
- 1/4 cup shredded coconut
- 1/2 tsp ground cinnamon
- 1/3 cup honey
- 1/4 cup coconut oil
- Extras: feel free to throw in a few tablespoons of chia seeds or hemp seeds or chocolate chips if you like.

Making these guys waste free is my next step. Just wrap them up in some beeswax wrap or stick them in your food containers and voila. I usually keep them in the fridge to make sure they don’t melt in a big batch, but have carried them in my backpack for a few hours and they didn’t melt at all.
